2014 Blog 326: Apple Delight

I have learned this from my Ukrainian friend.

Take an apple, wash, and scoop out the middle part and the seeds. Put some honey. Microwave it in low power until the inside is soft. When cooked, open it up a bit by slicing so that its steam may go out. It can be served in singles or in multiples. If you are going to serve a number of apples, it would be cool to arrange it in some manner. Serve when just nicely warm.

This is just so good you know. I find it more enticing when you add nuts and just a little bit more honey upon serving.

2014 Blog 244: Is it Eh?

I recall a boy gardener we had, when I was maybe 10, who would come over and help my mom with our yard. He would take care of the grass and whatever yard errands my mom might have. On nights when my mom and dad are out, I recall he would come and babysit me and my siblings. Me and my brother liked it when he comes over in the evening, because it also meant playing outside at the night and then he would make us this fried flat sweet dough for night snack. This sweet dough got stuck in my memory because it had become one of my faves. I thought it was just flour, water, and sugar mixed to whatever texture you might like. As I grew older, I tried making it myself a few times using whatever I could recollect from such a young memory. Our old narrow kitchen is still vivid in my head. I still strongly recollect the warm nights when he would just let me and brother play outside with him. We would run around the yard endlessly, which seemed so large to me at that time. I remember. But I can’t quite figure out how to make that fried dough he used to make us. Then, it hit me today. It could be what we call the elephant ears. After all these years, I wondered. But it is just the elephant ears. It is wonderful now to be able to put a name on it. Though, I wish I could also put a name on the boy.

2014 Blog 153: A Kid’s Meal

After swim lessons, the eight year old boy grabbed a bag of cheddar cheese popcorn from the vending machine. He seemed pretty excited. He did not eat it on our way home. It was kinda odd. We got home and he had to show it to his brother.  We know it was not for his brother. We wondered.  He was not telling something.  He still looked so excited. He had it many times before, so what is new?  Then he asked me for a cup of milk. As soon as he had it, he opened the bag of cheddar cheese and poured some of it into the cup of milk. Really. I asked him if was experimenting something and he quickly answered, with a big smile, that he just wanted to try if it will taste good. Yes, he was having a food experiment. He let the popcorn soak a little bit.  As soon as he thought it was good already, he drank the milk and then munched the popcorn into his mouth. He concluded, with a bigger smile, that it is good indeed. Nothing else is said but he asked for more milk. I believe him but I did not dare tried.

2014 Blog 148: Snickers Ice Cream Bar

Yeah. It’s what it says. Snickers in an ice cream bar. Have you tried it? I found it 2 days ago in a vendo machine at the Rec Center. It just magnetized me the first moment I saw it.  I just could not get one at that time because the vendo machine was of course broken. But my children promised me that I shall get one the next time we are at the Rec Center. And that is today. So truly, I got my snicker ice cream bar today.

It is quite expensive for a little ice cream bar to buy from a vendo machine. And it is pretty heavy load of calories to indulge. But what the heck. I got my first piece today! Oh the first bite was heavenly. Imagine.. vanilla ice cream mixed,  peanuts, layered with caramel, and coated with crunchy snickers chocolate.   It is dangerously good.

20140528-220251.jpgIf you like snicker chocolate bar, I think you should not miss the ice cream version. I have not seen it at places where I do my regular grocery shopping.  So now I  need to hunt it down.

2014 Blog 138: Champorado

Champorado is a Philippine cuisine which is prepared like a chocolate rice porridge. Its main ingredients are glutinous rice, cocoa powder, milk, and sugar. Simple.  Traditionally, it is done by cooking the glutinous rice in boiling water, mixing it with cocoa powder, and stirring it occasionally until the rice is cooked. There should be enough water to make it like a porridge. Sugar can be added to taste.  These days, there are now champorado mixes in asian markets that makes cooking champorado even easier. Normally, it is served hot and topped with milk. It is a delightful hot breakfast. My kids love it topped with their initials written in whipped cream.  Left-overs can even be chilled and served as snacks in nice hot afternoons.   When chilled, try serving it with sprinkled chocolate powder.  Yeah.   I think it is such a delish that way.  Just another layer of chocolate.  It is scrumptious, hot or cold.
